Banana pancake recipe
I posted a photo on Instagram of some quick and easy banana pancakes I’d whipped up for Sophia’s tea. A few people have asked me for the banana pancake recipe. The problem here is that I really am a ‘throw it all in and give it a stir’ kind of baker. I’m terrible for not measuring things – and as you can imagine, it really doesn’t always work out for me either!
But anyway, I revisited them this evening, with a little more care and attention, to bring you the super easy banana pancake recipe.
Note: This recipe produces about 6 pancakes but you could make them bigger/smaller/cook them differently. We like to be flexible! I did give it a go with the silicone waffle mold we have and cooked them in the oven for about 12 mins on a medium heat and they turned out quite good!
2 ripe bananas
5 tbsp plain flour
1 to 2 tbsp milk
You can also add mixed spice, nutmeg, blueberries, chocolate chips, raisins – go wild!
So it really is super easy to make these:
– mash bananas in a bowl
– add eggs and mix up well
– add flour
– add milk (you may not need it all – I tend to judge by house sloppy my mixture is depending on banana size, egg size etc. but you can see the below photo for an idea!)
– add any other extras you’ve discovered need using up in the fridge
– heat up a frying pan with a little frylight and then I do three banana pancakes at a time (which gives you an idea of size)
– they only need a couple of minutes before you flip them over…
Sophia absolutely loves them for breakfast or a light supper and they keep too – I’ve kept them in an airtight tupperware and we’ve had them the following day and they’ve still been super good!
